Eggless Vanilla Sponge Cake

Simple, Eggless Vanilla Sponge Cake Ingredients 2 cups All purpose Flour 1 cup Sugar  1/2 cup Oil 1 cup Yogurt 1 tsp Baking Powder 1 tsp Baking Soda 2 tsp Vanilla 1 cup Hot milk   How to make cake : Preheat oven at 180 degrees Celsius.  Grease and dust 8" cake pan. Combine curd, castor sugar, oil and vanilla in a bowl. Mix well till the sugar is almost dissolved. Sift flour, baking powder and baking soda. Set aside all the dry ingredients. Slowly add the dry ingredients to wet ingredients and mix them to form a thick batter. Add hot milk to the above batter to give it a drop consistency. Pour into greased pan. Bake for 30 to 35 mins until done.  Perform a toothpick test. If the toothpick comes out clean, the sponges are ready. Else bake for another 5-10 minutes. Cool on a baking rack until completely cold before decorating or frosting.

When life gives you lemons you make Lemon Crinkle Cookies! The freshness of lemon in soft sweet and tangy cookies is just perfect for your relaxed summer evenings! Ingredients ⅓  cup Butter, soft at room temperature ½  cup Castor Sugar 1  cup Maida(All Purpose Flour) 1 Tablespoon plain Yogurt   ¼ teaspoon Baking Soda 2 tsp grated lemon zest 1 tbsp lemon juice. Pinch of Salt 2-3 drops of yellow liquid colour 1/4 cup icing sugar Method: Sift in the dry ingredients - flour, baking soda, salt. Cream together butter and sugar for 1-2 minutes till you have a smooth, creamy mixture. Add the yogurt, lemon, lemon zest and mix well. Add dry ingredients to the wet mixture. Mix together till the dry combines with the wet mixture and you have a soft dough. Do not over mix or you will end up with a tough textured cookie. Chill in the fridge for at least 30 minutes. Stromboli is an American-Italian turnover. This is my version of stromboli and loved by my family. Its super healthy and filling. Can be served at breakfast or as a one meal dish. The covering is made with homemade multigrain flour (my version has whole wheat flour, millet flour and gram flour) and flaxseed powder. You can try your version of stromboli and share the recipe with us. Ingredients 1 1/2 cup Whole wheat Flour 1/2 cup Finger Millet Flour (Ragi) 1/4 cup Gram Flour 2 tbsp oil 3/4 tbsp instant dry yeast 3/4 tsp salt 1 tbsp butter 1 tbsp Flax seed powder 250 ml water Stuffing: 1 1/2 cup tightly packed finely chopped spinach 1 cup sliced mushrooms 100 gms crushed cottage cheese 1 tbsp crushed garlic 1/2 cup finely chopped onion 1/2 cup grated cheese (optional) 1/2 tsp salt 1/4 tsp pepper 1/2 tsp mixed herbs 1 tbsp oil Method: Stuffing Heat a pan on medium heat. Eggless muffins could be so light and spongy! It's so easy to make that the kids in my baking class have effortlessly baked these muffins. They are so irresistible that they didn't give up the chance to licked the bowl of batter! Do you go bananas when I even mention it? Bring this recipe to banana haters club and they will fall for it!  When I hear "Banana bread", the first word in my mind is "wholesome". But most of the banana breads are made with refined flour and are loaded with refined sugar. I have a teenager who is actively involved in sports and hates bananas. I needed a  power packed recipe where I can get the complete nutrition for my banana hater.   Banana:  Bananas are cheap alternatives to sports drink. They are easily available and provide complete nutrition. They are loaded with essential vitamins and minerals such as potassium, calcium, manganese, magnesium, iron, folate, niacin, riboflavin, and B6. These all contribute to the proper functioning of the body and keeping you healthy. It is high in soluble and non-soluble fiber, hence easy to digest and good for heart.  Walnuts: Walnuts contain a number of neuroprotective compounds, including vitamin E, folate,
