Sugar Cookies
It's always a pleasure to wake up my family to the sweet smell of freshly baked cookies! Once in a while you give in to the pleasure of refined flours and sugar. Here's my a no fail melt in the mouth butter cookies recipe for you.
Ingredients
- ⅓ cup Butter, soft at room temperature
- ½ cup Castor Sugar
- 1 cup Maida(All Purpose Flour)
- 1 Tablespoon plain Yogurt
- ¼ teaspoon Baking Soda
- 1 teaspoon Vanilla Extract
- Pinch of Salt
Method:
- Cream together butter and sugar for 1-2 minutes till you have a smooth, creamy mixture.
- Add the yogurt, vanilla and mix well.
- Sift in the dry ingredients - flour, baking soda, salt.
- Mix together till the dry combines with the wet mixture and you have a soft dough. Do not over mix or you will end up with a tough textured cookie.
- chill in the fridge for at least 30 minutes.
- Preheat oven to 180 C. Grease and line a baking sheet with parchment paper.
- Take the dough from the fridge and roll and shape it or roll into balls and flatten them.
- Place the cookie dough balls on the prepared baking sheet 1 inch apart. Bake at 180 C for 20 minutes or till you get the desired color.
- Melt the chocolate in microwave or bain marie.
- Dip half cookie in the molten chocolate and place it back on the parchment paper to cool down.
Note: Avoid yogurt to get a super crunchy cookie. Amount of yogurt decides the softness/tenderness of your cookies.
